Sirloin Salad
INGREDIENTS

1 1/4 lbs grass-finished beef sirloin or strip steak (1" thick)
8 cups fresh lettuce or spinach (other greens)
1/2 cup crumbled or cubed strong cheese
1/2 cup pine nuts or coarsely chopped walnuts
1/2 cup dried cherries or diced apple (optional)
Dressing:
1/2 cup extra virgin olive oil
1/4 cup burgundy wine
1 clove garlic, crushed
1/2 teaspoon salt (optional)
3/4 teaspoon pepper

DIRECTIONS 

In medium bowl, whisk together dressing ingredients. Remove and reserve 1/2 cup; cover and refrigerate. Trim fat from steak. Cut steak lengthwise in half and then crosswise in 1/8 to 1/4 inch thick bitesize strips. (slicing is aided by having the steak partially frozen).

Add beef to remaining dressing; toss to coat. Marinate at least 30 minutes, then sauté over low heat to desired doneness. Prepare lettuce, add cooled beef, cheese, and other ingredients and gently toss with reserved dressing.
Adding sesame seeds and raw sunflower seeds increases nutrition.
